Cherry Muffin Recipe!

Cherry Muffin Recipe!

    For 6 muffins

    1 large egg
    ¼ C packed brown sugar
    1 ½ oz or scant 3 T canola oil
    ¼ C heavy cream
    ¼ C whole milk
    ¾ tsp vanilla
    1 1/8 C flour
    1 tsp baking powder
    1/8 tsp nutmeg
    pinch salt
    1 ½ T (3/4 oz) melted butter
    ¾ C (3 oz) fruit

Preheat oven to 375.  Grease a standard muffin pan, or use papers.

In a medium bowl, whisk together the eggs, brown sugar, oil, cream, milk and vanilla.

In a large bowl sift together flour, baking powder, nutmeg and salt.  Make a well in the center and pour in the egg mixture.  Gradually mix into the dry ingredients until just combined.  Add the melted butter and stir until almost smooth but still slightly lumpy.  Do not overmix.  The batter will be fairly thick.

Gently fold the fruit into the batter so that they are evenly distributed.  Spoon the batter in to the muffin cups, filling each ¾ full.  Sprinkle with sugar for crusty top.  Bake until a toothpick inserted into the center of a muffin comes out clean, 20 – 22 minutes.

Let stand in pan for 5 minutes, then remove each muffin from its cup with a small spatula.
