Cherry Muffin Recipe!

Cherry Muffin Recipe!

    For 6 muffins

    1 large egg
    ¼ C packed brown sugar
    1 ½ oz or scant 3 T canola oil
    ¼ C heavy cream
    ¼ C whole milk
    ¾ tsp vanilla
    1 1/8 C flour
    1 tsp baking powder
    1/8 tsp nutmeg
    pinch salt
    1 ½ T (3/4 oz) melted butter
    ¾ C (3 oz) fruit

Preheat oven to 375.  Grease a standard muffin pan, or use papers.

In a medium bowl, whisk together the eggs, brown sugar, oil, cream, milk and vanilla.

In a large bowl sift together flour, baking powder, nutmeg and salt.  Make a well in the center and pour in the egg mixture.  Gradually mix into the dry ingredients until just combined.  Add the melted butter and stir until almost smooth but still slightly lumpy.  Do not overmix.  The batter will be fairly thick.

Gently fold the fruit into the batter so that they are evenly distributed.  Spoon the batter in to the muffin cups, filling each ¾ full.  Sprinkle with sugar for crusty top.  Bake until a toothpick inserted into the center of a muffin comes out clean, 20 – 22 minutes.

Let stand in pan for 5 minutes, then remove each muffin from its cup with a small spatula.

Innkeeper Grape Arbor Bed & Breakfast

Enjoy the Arts this summer in Chautauqua!

Here at Grape Arbor Bed and Breakfast we’re getting ready for an exciting Fourth of July weekend! Our reservations are filling up and we’re preparing some delicious Independence Day breakfast items for our guests! But our business doesn’t end after the Fourth and neither do opportunities to enjoy all that the area has to offer.

Check out the Chautauqua Institution located in Chautauqua, New York. Enjoy one of their opera, such as the performance of Vincenzo Bellini’s Norma on Saturday, July 17 (for a full list of performances, visit www.ciweb.org). Or perhaps a selection from the Institution’s summer lecture series would be more your taste, which presents world renowned speakers – several lectures daily. While enjoying the comfort and relaxation Grape Arbor has to offer, you can expand your mind and create long lasting memories at one of the Chautauqua Institution’s many summer events!
