Come Escape and Dine!

Before anyone gets the winter blahs...and says that there is nothing to do...consider a wonderful dining experience here in North East PA presented by the Culinary and Wine Institute at Mercyhurst North East.  Starting on January 6th, and on every Thursday thereafter, they will be preparing an International dinner to be served at beautiful Lakeview Country Club.

The cost for each meal is $30 per person (including tax); seating begins at 6pm with dinner served at 6:30pm.  What a wonderful way to spend a romantic evening or getaway.  I have had lunches prepared by the Culinary students, and the food is outstanding.  There is always a recommended wine to go with the food.

And definitely reserve in advance.....the last series in the fall was a lunch series, and it sold out very fast.

Just to give you an idea of the type of food that is being offered....on Thursday, January 27.. Classic French:  starting with a gougere (choux pastry) with ham and mushrooms, potage garbure (root vegetable stew), mixed green with French vinaigrette, Chicken Marengo resting in a tomato and wine sauce, haricots vert, pan roasted potatoes, orange chocolate mousse.  YUM!

Cookie Baking Time!

I know that when you all come here, you just love the chocolate chip cookies.  But it is Christmas, so we need to be thinking of something a little bit different, ok?  So we have been working on our holiday cutouts, but with a bit of a different twist...eggnog.  That's right, Eggnog Cookies.  So far,  all I have gotten is raves.  So here is the recipe. And don't worry.  The chocolate chipper will be back after the holidays.  Have a great one!

Eggnog Cookies
1 C unsalted butter                   1/2 tsp fresh ground nutmeg
2 C confectioners sugar             3/4 tsp salt
2 T light corn syrup                   1 large egg, lightly beaten with 2 T water
3/8 tsp eggnog flavor                 2 tsp baking powder
3 1/2 C flour
Cream together butter, sugar, and corn syrup until light and fluffy.  Beat in the eggnog flavor, nutmeg and salt.
Add the baking powder to the egg and water, and stir to dissolve.  Add this mixture, along with the flour, to the ingredients in the bowl and beat until smooth.
Divide the dough into three pieces, wrap them in plastic and refrigerate for 1 hour, or overnight.
Preheat oven to 350.  Take out dough and roll to 1/8" thickness on a lightly floured work surface.  Cut in desired shapes, and transfer to ungreased cookie sheet.  If desired (we do) paint the cookies with a bit of milk, then sprinkle with colored sugar.  Bake just until slightly brown on edges, about 8 minutes.

Christmas Time at the Grape Arbor

Yes! It's that time of year.  The Grape Arbor Bed and Breakfast is filled with the smell of bread and cookies baking.  The trees are all trimmed, and my HUGE collection of German nutcrackers is displayed

There is snow---and skiing!  Peak and Peak in Clymer NY opened last weekend for downhill skiing, snowboarding, and my favorite cross country place--Wilderness Lodge in Wattsburg PA is open as well.  Both of these places are only 15 - 20 minutes from the inn.  Unlike us, they have several FEET of snow.

So..if you have finished with your shopping, or even if you have not, think about coming and skiing, or just relaxing by the fire.
